Grilled Zucchini Rollups Makes 10 Rollups
1/4 cup Feta Cheese, Finely Crumbled 1/4 cup Cream Cheese, softened 2 Tbsp Mayonnaise 1 Tbsp Minched Fresh Thyme 1 Tbsp Minched Fresh Oregano 1 Tbsp Fresh Lemon Juice 3 Tbsp Extra Virgin Olive Oil (divided)
10 8 inch long strips Zucchini sliced about 1/4 inch thick and about 2 inches wide
1/2 tsp Lemon zest
Garlic Powder and Pepper - to taste
Preheat Grill: to Medium High Heat
Combine: Feta, Cream Cheese, Mayonnaise, thyme, organo, lemon juice, 1 Tbsp of Olive Oil and pepper for filling in a bowl. Then set aside and refrigerate.
Using remaining 2 Tbsp of Olive Oil, coat zucchini strips and sprinkle with salt, garlic and pepper to taste
Grill Zucchini uncovered, over direct heat for about 2 minutes per side. Set aside and let cool
Pat slices dry with a paper towel, then spread 1 tsp of filling evenly on each zucchini strip. Rollup and top with Lemon Zest.
